How do I add an app or a site?

There is one add path for both kinds: the plus tile in the Blocked apps sheet opens Apple's picker, apps you tick land in Blocked apps and websites land in Blocked sites. Picks are staged rather than applied, so nothing changes until you press Save at the foot of the sheet and confirm. Saving adds to what is already sealed and never replaces it, so a pick that came back without your existing apps cannot lose them. Adding is available for the whole term; removing is not, and waits for the term to end.
One picker, two destinations
Fold'em has a single add affordance rather than one for apps and another for websites, because Apple's picker returns both kinds in one pass. The picker's own footer says where each lands: apps in Blocked apps, websites in Blocked sites. There is no typed address field anywhere in the app, deliberately: a site you type would be covered inside Safari only, while the shield's headline is about every browser, and a fourth site number on a page that already carries three would be a way to mislead yourself.
Picks are staged. What comes back from the picker sits in a draft, the sheet's foot grows a white Save with "Discard changes" under it, and a small line counts what is waiting, in the form "3 staged · save to seal". Until you press Save nothing about the phone has changed.
Saving is a union with what is already sealed, not a replacement. That matters because the picker opens with your sealed apps ticked inside it, and an accidental untick cannot drop anything: the seal only grows.

Open the apps sheet from the Shield tab
Tap the APPS tile. The sheet is titled Blocked apps and its line reads "Sealed until your term ends November 28. You can add while it runs, never remove." Your sealed apps are drawn as a grid, with a dashed plus tile at the end labelled Block your betting apps.

Tick what you want in Apple's picker
The plus tile opens the system picker, seeded with the current seal. Tick any app or website, then Done. Apple draws the real icons and names here; Fold'em never sees them, which is why the sheet behind counts rather than lists.

Save at the foot
Back on the sheet, press Save and confirm. The confirmation names what is about to be sealed and, when your term has an end date, the day it holds until. Discard changes throws the staged pick away and leaves the seal exactly as it was.

Three caps of 50, counted apart
Apple's framework holds up to 50 shielded apps, up to 50 shielded websites and up to 50 domains in the Screen Time site filter. They are three separate limits and Fold'em never adds them together. If a save runs past one of them, the warning names the kind that was cut and appears next to the card that owns it, so a truncated pick is never a silent one.
The number on the APPS tile is a count of apps against the apps cap. Sites you added are counted on the web sheet, and the resolver's own list is a third number that belongs to neither. They mean different things and are never summed.
Categories are not added here
If you tick a whole category in this pass it is not blocked from here. Categories have one door of their own, the "Block the Games category" switch under More protection, because sealing a category is a different commitment with a different way out. The sheet says so where the pick was made rather than dropping it silently.
What this does not do
Nothing on this sheet removes anything. There is no remove control while the term runs, no way to shrink the seal, and support cannot do it for you either; the seal comes off when the term ends. It cannot add an app that is not installed on this phone, and it cannot add anything to another device. And a website added here is shielded inside this phone's browsers, which is not the same as the resolver's list: the two layers cover different ground and the article on the site list explains which is which.
